Resepi Popia Mama - Kapten Redeye

This recipe belongs to Kapten Redeye's Mama which he shared as his notes in fb. It's very similar to my mom's recipe. Read the footnote to know the slight difference in my mom's recipe and Captain's recipe. You may also want to refer to the photos in my mobile uploads. Those who would like to try, all the best.

Kulit Popia

Bahan-bahan

Tepung gandum 1 Kg

Putih telur 2 Biji

Garam

Cara Membuat Adunan

1.Bancuh tepung dengan air bercampur garam

2.Pukul putih telur hingga kembang

3.Masukkan putih telur ke dalam adunan tepung tadi

4.Gaul hingga sebati.Pastikan adunan boleh dijemput.

5.Simpan di dalam peti ais selama setengah hari - rehatkan tepung tu

Cara membuat kulit popia

1.Keluarkan tepung dari peti ais,biarkan buat sementara waktu at room temp.

2.Sapu sedikit minyak ke dalam kuali

3.Satu kali sapuan minyak boleh digunakan untuk membuat 3 kulit popia

4.Jemput kulit popia dan letakkan atas kuali - pakai tangan

Inti Popia

Bahan-bahan

100 g taugeh

1 biji timun

250 g sengkuang

10 g bawang goreng

2 ketul tauhu

Cara menyediakan inti popia

1.Celur taugeh

2.Cincang timun

3.Parut sengkuang,kemudian ditumis dengan 2 biji telur kuning.Campur garam secukup rasa

4. Goreng tauhu,kemudian potong halus-halus

Kuah popia

Bahan-bahan

Kismis 2 cawan

Cuka 2 sudu besar

Cabai kering 10 gram

Gula 1/2 Kilo

Cara menyediakan kuah popia

1.Rebus kismis,kemudian kisar dengan cabai kering

2.Masukkan kismis yang dikisar dengan cabai kering ke dalam periuk.Masukkan sedikit air

3.Campurkan cuka,gula dan garam secukup rasa.Masak dengan api yang kecil sehingga kuah pekat

tips = inti tu kalau nak sedap bubuh lah bawang goreng, steam shrimp meat dll

P/s My mom's recipe:

1. The sauce- We use dates instead of raisins and we don't put vinegar.

2. The skin- We put 2 tablespoons of vegetable oil in the batter so that the pan does not need any greasing.

3. The filling- We only use stir fried sengkuang and carrot with prawn/ crabmeat or dried shrimp. We also put some sliced omelette in the roll. However, since I couldn't get sengkuang, I followed this recipe (with omellet) and it turned out as nice as my mom's.

The verdict - Both my mom's and Captain's mama's recipe rock!!!
