Vegan Chocolate Fudge Cake

oven: 180°C

  • 50g (2oz) cocoa powder
  • 250g (8oz) plain flour
  • 250g (8oz) sugar
  • 125g (4oz) vegan margarine
  • 300ml (½ pint) soya milk
  • 30ml (2 tbsp) golden syrup
  • 5ml (1 tsp) bicarbonate of soda
  • 15ml (1 tbsp) vegan margarine
  • 15ml (1 tbsp) icing sugar
  • 5ml (1 tsp) of golden syrup
  • 1 x 100g vegan chocolate bar
  1. Mix soya milk and bicarbonate in a saucepan.
  2. Add margarine, syrup and melt together.
  3. Sieve all dry ingredients into a mixing bowl.
  4. Add the wet ingredients and mix thoroughly.
  5. Grease and line an 20cm (8") round cake tin.
  6. Pour the mixture into the prepared cake tin.
  7. Bake in the oven for 30 minutes at 180°C / 350°F.
  8. Reduce heat to 160°C / 300°F for approximately 60 minutes. (if skewer comes out clean the cake is ready)
  9. For the icing melt ingredients slowly in a saucepan
  10. Allow to cool and spread over chocolate cake
